Microbial Interactions in the Rumen and Their Potential Impact on the Survival of Escherichia coli O157

چکیده
Cellulose and other plant fibre polymers are fermented in the rumen by a cellulolytic biofilm containing a complex mixture of microbial species. Polymer hydrolysis and fermentation are accompanied by the release of plant secondary “defence” chemicals such as tannins, saponins and coumarins. The release and microbial transformation of these compounds [4] modifies the gut environment and the processes therein. Although ruminants have traditionally been seen as “mobile fermentors” [11], there is increasing awareness of their contribution to global warming through methane production and their possible role as reservoirs for pathogens such as Escherichia coli O157.

Effect of Electron Beam Irradiation on Survival of Escherichia coli O157:H7 and Salmonella enterica serovar Thyphimurium in Minced Camel Meat during Refrigerated Storage
Background: Electron beam irradiation is one of the effective ways to control food-borne pathogens. We evaluated the effect of electron beam irradiation on survival of Escherichia coli O157:H7 and Salmonella enterica serovar Thyphimurium in minced camel meat during refrigerated storage. Methods: The meat samples were inoculated with E. coli O157:H7 and S. enterica serovar Thyphimurium and then...
متن کاملStudy on the growth and survival of Escherichia coli O157:H7 during the manufacture and storage of Iranian white cheese in brine
The behaviour of Escherichia coli O157:H7 was studied during the manufacture and storage of Iranian white cheese in brine. Cheese was manufactured using pasteurized cow milk and inoculated with E. coli O157:H7 with inoculum level of 103 cfu/ml. Four treatments were designed. Cheeses were made with or without starter culture and kept immersed in 6 or 8% salt brine during ripening and storage. Ch...
متن کاملSurvival of Escherichia coli O157:H7 and Listeria monocytogenes in Doogh, A Traditional Iranian Dairy Beverage
Background: Unlike industrially production, Iranian traditional doogh are not pasteurized after production. Hence, possible contamination with different pathogenic bacteria may occur during production or post-production of traditional doogh. The aim of the present study was to monitor the behavior of Escherichia coli O157:H7 and Listeria monocytogenes in traditional Iranian doogh at different t...
متن کاملMeasurements of fitness and competition in commensal Escherichia coli and E. coli O157:H7 strains.
Although the main reservoirs for pathogenic Escherichia coli O157:H7 are cattle and the cattle environment, factors that affect its tenure in the bovine host and its survival outside humans and cattle have not been well studied. It is also not understood what physiological properties, if any, distinguish these pathogens from commensal counterparts that live as normal members of the human and bo...
متن کاملEdible films based on chitosan-flaxseed mucilage: in vitro antimicrobial and antioxidant properties and their application on survival of food-borne pathogenic bacteria in raw minced trout fillets
Various natural oils/extracts and their constituents incorporated into biopolymer-based edible films as a promising technology with the knowledge that these compounds have been able to reduce microbial growth and chemical changes of packed foodstuffs. The objective of this study was to evaluate the effect of incorporation of Ziziphora clinopodioides essential oil (ZEO; 0, 0.25 and 0.5%) and ses...
